In the municipality of Santa Bárbara, coffee farming is a time-honoured tradition. Small-scale producers, many of whom are part of the MAM Indigenous group, cultivate their coffee on farms ranging from 0.3 to 1 hectare. These farms are located in remote rural areas where each producer brings a personal touch to their craft. Most process their coffee on-site using traditional wet-processing methods, often collaborating with neighbours and family to share resources like depulpers.
One such producer, Augusto Lopez, exemplifies this dedication. Having purchased his half-hectare farm just three years ago, he has been working hard to develop his processing infrastructure. With the guidance of Mario Recinos, who works closely with 12 producers in the area, the coffee from Santa Bárbara embodies the distinct culture, language, and expertise of the region.
